Embittered by the overwhelming amount of highly industrialized tortillas, we honour an ancient practice; TAMOA and the Rosas family –4th generation tortilleros– nixtamalize and stone grind different heirloom corn varieties, to offer flavourful and nutrient-rich tortillas in Mexico City.
